For the cheese
1 litre of fresh milk, The juice from 2 lemons, Salt
For the bread
1kg wheat flour, 25 gr dry yeast, ½ tablespoon salt, ½ litre sparkling water
Step 1. Put the flour and salt in a bowl. Move it so that it mixes well.
Step 2. Crumble the yeast over the flour and pour in the water with gas. Mix well.
Step 3. Knead with your hands to create a homogeneous dough.
Step 4. Mold the dough to give it a round shape and add flour.
Step 5. Brush it with water and then place some flax seeds on the dough.
Step 6. Transfer the loaf of bread to a tray and bake at 200ºC for 1 hour without preheating the oven.
Step 1. Bring a saucepan with fresh milk to a boil and add salt to taste. Also add the lemon juice.
Step 2. Stir well and check that the milk is cut. Let stand a few minutes and move to a cheese making cloth to drain all the whey.

Step 2. Place the crumbled fresh cheese, toasted sesame seeds and sprouts to taste on the bread.
