THE FLAVOUR OF FRESH PRODUCE
  Tunisian cuisine is internationally famous for its unmistakeable flavour. You just must try some of the specialities of this country, which are always made with the freshest produce.

As a starter, the best dish to try is a mechouia salad, made with tomatoes and chopped and poached peppers dressed with virgin olive oil and a spicy seasoning. Tunisian salad is like a Majorcan trampó with all kinds of fresh, finely-chopped vegetables; normally fresh tomatoes, peppers, onions and cucumber are included and it is always seasoned with a vinaigrette made with virgin olive oil, vinegar, lemon juice and mint, an ideal, healthy dish to help refresh you during the summer months.

Furthermore, Tunisia is famous for its many varieties of couscous, which can have up to 15 different accompaniments. This very typical Maghrebi dish originates from the Berbers, who were the original inhabitants of this country. Couscous is made with a base of durum-wheat semolina and seasoned with stewed vegetables, all kinds of meat - chicken, beef or lamb - and also any kind of fish. Tunisian couscous is unique and is different to Moroccan or Algerian couscous, because they add a concentrated tomato paste and harissa, a pre-prepared ingredient made with peppers and spices widely used in the country.

Another exquisite speciality is made with particularly tender and tasty lamb. The lamb is roasted slowly and naturally in its own juices and with fresh herbs. This dish is served in a cooked clay container, which helps keep it at the right temperature.

As far as desserts are concerned, fresh fruit is the best option. Prickly pears, watermelons and oranges are the most refreshing options although there are other possibilities, such as different types and flavours of sweets, usually made with almond and sugar pastry.
