REGIONAL FOOD
  Traditional cooking is noted for its simple preparation and the quality and freshness of the food. Over many centuries, the people from the Canary Islands have made use of their excellent ingredients to develop various original and tasty recipes.
Although its food is similar to the rest of the Canary Islands, Lanzarote particularly stands out for the great abundance of sea life that can be caught off the coast. No meal is enjoyed without Enyesques (appetizers), including Papas Arrugadas (a potato dish), Ropa Vieja (stewed meat in tomato sauce) and Carajacas (a meat dish). This is followed by a first course of Caldo de Pescado (thin fish soup) or Potaje de Berros (watercress soup). The second course may be a meat dish, such as Conejo en Salmorejo (rabbit with a sauce made of vegetables, water and bread) or Pierna Asada (roast leg) or a fish dish, such as Vieja Sancochada (boiled sea bream) or Atún Encebollado (tuna cooked with onions).You can sweeten your taste buds with any of the following desserts: Bienmesabe, Huevos Mole or simply a delicious banana. There is also a great variety of cheeses in Lanzarote. For instance, fresh, white goat's cheese with a smooth flavour that may be slightly acidic depending on the area of the island where it is made.
Queso frito (fried cheese) is also a very popular dish on the island. All traditional dishes are accompanied with Gofio made from ground maize or wheat which has formed the basis of the diet of people in the Canary Islands for hundreds of years.
There are more elaborate recipes involving gofio, such as Escaldón de Gofio, Gofío Amasado and newer recipes, such as Mus de Gofio and Flan de Gofio. All dishes are usually accompanied with Mojos and Adobos. These are sauces made with a blend of garlic, olive oil, vinegar and spices. Among the different types of mojos there is mojo rojo, mainly used on meat dishes and on papas arrugadas and mojo verde, used as a dressing on fish dishes.
All dishes can be washed down with a good wine from Lanzarote.
